CAVO Bar & Bistro is a small, neighbourhood Italian bar and bistro on Jl. Labuansait in Pecatu, Uluwatu. It opened in 2026 and is run by the two of us, Mitch and Judith. This is the story of why we built it, and what we hope it feels like when you walk in.
A place we would want to spend our own evenings
CAVO was born from a simple idea: to create the kind of place we would want to spend our own evenings. Not a big, fancy restaurant. A small room with low light, good music, a proper glass of wine and food that tastes like someone cares about it.
Why Uluwatu
Uluwatu has always held a special place in our hearts. The cliffs, the ocean, the sunsets and the laid-back spirit are part of it, but most of all it is the people. We have been welcomed by the warmth and kindness of the local Balinese community, whose culture, generosity and connection to this place make Uluwatu feel like home. It brings together people from all over the world, and we wanted CAVO to be a small part of that.
Nonna’s recipes, made in Uluwatu
Our food is inspired by Italian home cooking and the flavours of Rome. Many of our recipes come from Nonna and her deep love for her Italian heritage: simple, comforting dishes passed down through generations and made to be shared around a table. Alongside them are dishes we have created along the way.
In practice, that means:
- Roman-style pizza made with dough fermented for 48 hours, so the base is light and crisp.
- Fresh pasta, made in our kitchen.
- Generous antipasti and house-baked focaccia.
- A curated Italian wine list and handcrafted cocktails from the bar.
Our motto is the same on every plate: nothing fancy, just good Italian food. Small venue, big flavours. You can see everything we cook on our food menu.
Our weekly rituals
We wanted CAVO to have a rhythm, so every day of the week has its own small ritual:
- Every day, 4–6 PM: Aperitivo Romana, with chef’s antipasti, beer, house wine and spritz from 60k.
- Monday: Table for Two from 4 PM, 599k for two, including antipasto, two pizzas or pastas, two glasses of house wine and a dessert to share.
- Tuesday: Tuesday Table, chicken parmigiana with an Island Brewing beer.
- Wednesday: Pasta & Vino, all day.
- Thursday: Pizza e Spritz, all day, with acoustic sessions.
- Friday: Vinyl & Vino from 7:30 PM, with a vinyl DJ set and happy hour from 10 PM to midnight.
All the details and prices are on our What’s On page.
Come as a guest, stay as family
More than anything, we hope CAVO becomes a place where people feel welcome and connected. Whether you have just arrived in Uluwatu, have called it home for years, or are one of the local people who make this place so special, we want you to feel like you belong here. When you walk through our doors, you are not just a guest. You become part of our family.
